When I was a kid, fajitas seemed like one of those magical dishes you’d only get at a restaurant. Hearing the sizzle and seeing the steam trail through the dining room was practically dinner theater, even if I was never bold enough to order them myself. Alas, if only I knew how much of it was, well, smoke and mirrors!

Now that I’m in charge of feeding my own family, I’ve come to realize how easy and approachable fajitas are. They often don’t require much in the way of ingredients, equipment or time. Most of the work goes into the prepping — even that is typically just low stress slicing — and after that, you can let a hot skillet or sheet pan do the work. Plus, the flexible nature of fajitas means you can tweak the proteins, spices and vegetables and let people build their own dinner with a choice of toppings.
