There are times when even the thought of a full-meal production is just too much to bear. Say, after a busy holiday week? Even if it’s just an ordinary weeknight when you truly cannot be bothered, sometimes a variety of this-and-that snacking is exactly what’s called for.
Some folks call this fending, as my colleague Daniela Galarza has written about. You might call it noshing or grazing or plain survival.
Whatever your term of choice, I support it. While pulling various items out of the cupboard and fridge is certainly one way to go, if you anticipate snacking for dinner in your future, it might be helpful to keep a few easy building-block elements in mind for when the need, or craving, arises. Some can be made in advance and waiting for you, and others can be pulled together at a moment’s notice. Here are some ideas for those kinds of lazy, low-lift lunches or dinners from our archives.
Simple Deviled Eggs
Pictured above. Hard-cooked eggs can be enough for a meal on their own, especially when paired with a few other bites. So if you want to stop at that, follow my colleague Ann Maloney’s steaming method as described in this recipe. If you want something a little more ambitious, go ahead and full-on devil some or all of them. Either way, they’ll keep a few days in the fridge. Get the recipe.
